  1. For kofta:
  2. 1 tbsp oil/butter
  3. 1 tbsp chilli-ginger-garlic paste
  4. 1 tsp cumin seeds
  5. 1 cup spinach puree
  6. 1/2 cup cashew nut powder
  7. 1/2 cup gram flour
  8. 1/2 cup grated cottage cheese
  9. 1 tbsp roasted cumin powder
  10. 1 tbsp dry mango powder
  11. 1/2 tsp cardamom powder
  12. 1/4 tsp black pepper powder
  13. 1 tbsp cornflour
  14. 1/4 cup all-purpose flour for coating
  15. For gravy:
  16. 2 tbsp+2 tbsp butter
  17. 3 tomatoes, chopped
  18. 4-5 onions, chopped
  19. 6-8 garlic cloves, chopped
  20. 8-10 cashew nuts
  21. 1 tbsp red chilli powder
  22. 1 tbsp garam masala
  23. 1/2 tsp turmeric powder
  24. 1 bay leaf
  25. 2 green cardamom
  26. 1/4 cup cream
  27. 1 tbsp kasuri methi
  28. as per your taste Salt
  29. as required Oil for frying kofta

Steps to make to make Shaam Savera Kofta Curry

  1. Heat oil or butter and sauté chilli garlic ginger paste for few seconds, then add spinach puree and cook for couple of minutes.
  2. Then add cashew nut powder, gram flour and salt. Cook for few minutes or till it becomes thick mass. Then turn off the heat and let it cool.
  3. Add cornflour, black pepper powder, roasted cumin powder, dry mango powder and salt in paneer, mix and knead for while and prepare small balls.
  4. Now take some spinach mixture and flatten it on palm, place the paneer ball in centre, bring the edges together and seal it properly and make smooth and crack free balls. Roll and coat these balls in all-purpose flour.
  5. Heat oil and deep fry these balls on medium heat. Then slice it in halves and keep aside.
  6. For gravy:
    Heat butter in pressure cooker, sauté onion and garlic for while. Further add tomatoes and cashew nuts and cook for while. Then add one cup water, close the lid of pressure cooker and cook it for 3 whistles. Once steam release, open the lid, let it cool little then grind it in puree and strain it.
  7. Heat 2 tbsp oil butter in pan, add cumin seeds, bay leaf and cardamom and stir for second. Then add spices and saute few second. Then add spices and saute few seconds.
  8. Further add prepared tomato onion puree and salt. Let it simmer for 3-4 minutes. Then add cream, kasuri methi. Cook for 2 minutes and then turn off the heat.
  9. At the time of serving, arrange kofta halves and add piping hot gravy. Serve hot.
